- 1 lb Italian sausage (sweet or spicy)
- 2 cups fresh or frozen cheese tortellini
- 4 cups vegetable broth
- 2 medium carrots, sliced thinly
- 2 stalks celery, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups fresh spinach or kale
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1 tsp dried oregano (or 1 tbsp fresh)
- ½ cup grated Parmesan cheese
Instructions
- In a large pot over medium heat, brown the Italian sausage until crispy.
- Add diced onion, sliced carrots, and chopped celery; sauté for about 5 minutes until softened.
- Stir in minced garlic and herbs; cook for an additional minute until fragrant.
- Pour in the vegetable broth and add spinach or kale. Bring to a simmer.
- Add tortellini and cook according to package instructions until they float.
- Before serving, stir in grated Parmesan cheese until melted.
Notes
- This soup can be made with fresh or frozen tortellini.
- Feel free to add other vegetables like bell peppers or zucchini.
