Ingredients

- 1/2 cup cornstarch
- 1 tablespoon baking powder

- 1/2 teaspoon sugar
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 3/4 cup club soda or ice-cold water (adjust as needed for consistency)
Instructions
- In a large bowl, whisk together flour, cornstarch, baking powder, salt, sugar, onion powder, and paprika.
- Slowly add cold club soda or water, stirring gently until just combined. Do not overmix.
- Heat oil in a deep skillet to 350°F.
- Dip fish, chicken, or veggies in batter. Let excess drip off.
- Fry in batches for 3–5 minutes per side, or until golden and crispy.
- Transfer to a paper towel-lined plate or rack to drain.
- Serve hot with tartar sauce or lemon wedges.
