Deliciously moist muffins made with ripe avocados and packed with chocolate chips.
Ingredients

- 2 ripe avocados, mashed
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup semi-sweet chocolate chips
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk (or plant-based milk)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe avocados until smooth.
- Mix in the granulated sugar, brown sugar, eggs, milk, and vanilla extract until well combined.
- In another bowl, sift together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined; be careful not to overmix.
- Stir in the chocolate chips.
- Scoop the batter into muffin cups until two-thirds full and bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
Notes
- Make sure the avocados are ripe for the best flavor and texture.
- Feel free to substitute the milk with your choice of plant-based milk for a vegan option.
