Description

Deliciously moist muffins made with ripe avocados and packed with chocolate chips.


Ingredients

  • 2 ripe avocados, mashed
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk (or plant-based milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe avocados until smooth.
  3. Mix in the granulated sugar, brown sugar, eggs, milk, and vanilla extract until well combined.
  4. In another bowl, sift together the flour, baking powder, and salt.
  5. Gently fold the dry ingredients into the wet mixture until just combined; be careful not to overmix.
  6. Stir in the chocolate chips.
  7. Scoop the batter into muffin cups until two-thirds full and bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
