Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 6 cups low-sodium chicken broth
  • 8 oz cream cheese (cubed)
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste

Instructions

  1. Place the chicken breasts in a slow cooker or large pot. Season generously with salt and pepper.
  2. Add chopped carrots, celery, and enough chicken broth to cover the ingredients.
  3. Top with cubed cream cheese; allow it to melt into the mixture.
  4. Sprinkle garlic powder and onion powder over the top; stir gently to combine.
  5. Cook on low for 6-8 hours or high for about 4 hours until chicken shreds easily with two forks.
