- 1 piece Avocado
- 2 slices Cheese (Swiss, Cheddar, or Provolone)

- 1 tablespoon Mayonnaise

- 1/4 medium Red Onion
- 1 medium Tomato
Instructions
- Sprinkle salt and pepper over the chicken breasts.
- Heat a skillet over medium-high heat and add olive oil. Cook the chicken for 6-7 minutes on each side until golden brown.
- Slice the avocado, cheese, red onion, and tomato while the chicken is resting.
- Spread mayonnaise and Dijon mustard on the bread. Layer grilled chicken, avocado, cheese, and fresh veggies.
- Grill the sandwiches in the skillet for 3-4 minutes per side until golden and the cheese melts.
- Remove and let cool slightly before slicing in half and serving warm.
