Delicious blondies packed with Cadbury Mini Eggs, perfect for any occasion!

Ingredients

Scale
  • ½ Cup Butter (melted and cooled to room temp)
  • ¾ Cup Brown Sugar
  • ¼ Cup Sugar
  • 1 Egg (large)
  • 1 ½ teaspoons Vanilla Extract
  • ¾ teaspoon Almond Extract
  • 1 ½ Cups Flour
  • 1 teaspoon Cornstarch
  • ¼ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ¾ teaspoon Salt
  • ½ Cup Cadbury Mini Eggs

Instructions

  1. Preheat the oven to 350℉. Spray an 8×8 baking pan with nonstick spray to help hold the parchment in place. Line the pan with parchment paper and press into the edges.
  2. Cream together melted butter, brown sugar, and sugar for about 3 minutes or until light and fluffy.
  3. Add egg, vanilla and almond extract and mix until combined.
  4. Fold in flour, cornstarch, baking powder, baking soda, and salt.
  5. Fold in the Cadbury Eggs and press into the pan.
  6. Bake for 18-20 minutes, do not over bake! They will set up more out of the oven.
  7. Cool completely then cut into squares.

Notes

  • For best results, ensure that the butter is melted and then cooled slightly before adding to the sugar.
  • Do not over mix the batter to keep the blondies soft.
