- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 2 cups elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can (14 oz) diced tomatoes
- ½ cup sour cream
- ¼ cup chopped green onions
- 1 tablespoon olive oil
- ½ cup milk
Instructions
- Cook the Beef: Brown ground beef in a skillet over medium-high heat. Drain excess fat and return to heat.
- Season the Beef: Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
- Cook the Pasta: Boil macaroni in salted water until tender. Drain and set aside.
- Build the Base: Heat olive oil in the pasta pot. Add diced tomatoes and warm gently.
- Combine: Add macaroni and seasoned beef. Stir until evenly mixed.
- Make It Creamy: Pour in milk. Add cheeses gradually and stir until melted.
- Finish: Remove from heat. Stir in sour cream until smooth. Top with green onions and serve hot.
Notes
- For extra flavor, consider adding bell peppers or corn to the mixture.
