Description

A hearty beef stew made with tender beef chuck, fresh vegetables, and aromatic spices.


Ingredients

  • 2 pounds Beef Chuck (or sirloin)
  • 2 tablespoons Olive Oil (or vegetable oil)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Tomato Paste (or crushed tomatoes)
  • 1 teaspoon Ground Cumin (or coriander)
  • 1 teaspoon Ground Coriander (optional)
  • 1 teaspoon Ground Cinnamon (or nutmeg)
  • 1 teaspoon Paprika (or smoked paprika)
  • 1 teaspoon Black Pepper (or white pepper)
  • 1 teaspoon Salt (to taste)
  • 4 cups Beef Broth (or vegetable broth)
  • 1 can Diced Tomatoes ((14 oz))
  • 1 medium Green Bell Pepper (chopped)
  • 2 medium Carrots (sliced)
  • 1 tablespoon Fresh Parsley (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium-high heat until shimmering.
  2. Season 2 pounds of beef chuck with salt and black pepper. Brown the beef for 5-7 minutes.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, sauté 1 chopped onion until translucent, about 5 minutes.
  5. Add 3 minced garlic cloves and cook for another minute.
  6. Stir in 2 tablespoons of tomato paste, 1 teaspoon each of ground cumin, ground coriander, ground cinnamon, and paprika. Cook until fragrant.
  7. Return the browned beef into the pot and coat with the mixture.
  8. Pour in 4 cups of beef broth and 1 can of diced tomatoes. Bring to a boil, then lower the heat and cover.
  9. Simmer for 45 minutes, stirring occasionally.
  10. Add 1 chopped green bell pepper and 2 sliced carrots, and simmer for an additional 15 minutes.
  11. Adjust seasoning with salt and pepper as desired.
  12. Serve hot, garnished with fresh parsley.

Notes

  • This stew can be served with crusty bread or over rice.
  • For a thicker stew, you may add a cornstarch slurry during the last few minutes of cooking.
