Description
A hearty beef stew made with tender beef chuck, fresh vegetables, and aromatic spices.

- 2 pounds Beef Chuck (or sirloin)
- 2 tablespoons Olive Oil (or vegetable oil)
- 1 medium Onion (chopped)
- 3 cloves Garlic (minced)
- 2 tablespoons Tomato Paste (or crushed tomatoes)
- 1 teaspoon Ground Cumin (or coriander)
- 1 teaspoon Ground Coriander (optional)
- 1 teaspoon Ground Cinnamon (or nutmeg)
- 1 teaspoon Paprika (or smoked paprika)
- 1 teaspoon Black Pepper (or white pepper)
- 1 teaspoon Salt (to taste)
- 4 cups Beef Broth (or vegetable broth)
- 1 can Diced Tomatoes ((14 oz))
- 1 medium Green Bell Pepper (chopped)
- 2 medium Carrots (sliced)
- 1 tablespoon Fresh Parsley (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium-high heat until shimmering.
- Season 2 pounds of beef chuck with salt and black pepper. Brown the beef for 5-7 minutes.
- Remove the beef from the pot and set aside.
- In the same pot, sauté 1 chopped onion until translucent, about 5 minutes.
- Add 3 minced garlic cloves and cook for another minute.
- Stir in 2 tablespoons of tomato paste, 1 teaspoon each of ground cumin, ground coriander, ground cinnamon, and paprika. Cook until fragrant.
- Return the browned beef into the pot and coat with the mixture.
- Pour in 4 cups of beef broth and 1 can of diced tomatoes. Bring to a boil, then lower the heat and cover.
- Simmer for 45 minutes, stirring occasionally.
- Add 1 chopped green bell pepper and 2 sliced carrots, and simmer for an additional 15 minutes.
- Adjust seasoning with salt and pepper as desired.
- Serve hot, garnished with fresh parsley.
Notes
- This stew can be served with crusty bread or over rice.
- For a thicker stew, you may add a cornstarch slurry during the last few minutes of cooking.
