- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 cup tomato sauce
- ½ cup sliced green olives
- ¼ cup golden raisins
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat and add a splash of olive oil.
- Sauté the diced onion and bell pepper until softened (about 5 minutes).
- Push the vegetables aside and add the ground beef to the pan. Cook until browned, breaking it up with a wooden spoon.
- Stir in the minced garlic, cumin, and oregano; cook for an additional minute until fragrant.
- Add the tomato sauce and golden raisins, mixing well to combine.
- Fold in sliced green olives, cover, and simmer on low for about 10 minutes to meld flavors.
- Serve hot over rice or wrapped in tortillas.
