A delicious snack of roasted cashews with honey, spices, and fresh rosemary.
Ingredients

- 1/4 cup honey
- 2 teaspoons extra virgin olive oil
- 1/2 teaspoon kosher salt (plus an additional pinch)
- 1/2 teaspoon smoked paprika
- 1/8 teaspoon cayenne pepper (optional for a spicy version)
- 2 cups raw whole cashews (about 10 1/2 ounces)
- 2 teaspoons finely chopped fresh rosemary leaves
Instructions
- Place a rack in the center of the oven and preheat to 350°F.
- In a medium bowl, whisk together honey, oil, paprika, salt, and cayenne.
- Fold in cashews until evenly coated, then add rosemary.
- Spread cashews on a baking sheet and bake for 13-18 minutes, tossing every 5 minutes.
- Remove from oven, sprinkle with salt and toss. Serve warm or at room temperature.
