Description
A delicious and creamy pasta dish with chicken, sun dried tomatoes, and a blend of seasonings.
Ingredients

- 8 ounces penne or rigatoni or fettuccine
- 1 pound boneless skinless chicken breasts or thighs
- 3 cloves garlic, minced
- 1 jar sun dried tomatoes in oil
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 2 cups fresh spinach (optional)
- Salt to taste
- Pepper to taste
- Red pepper flakes to taste (optional)
Instructions
- Salt your water well. Cook the pasta until just tender, saving 1 cup of pasta water before draining.
- Cut the chicken into bite-size pieces, season with salt and pepper, and cook in a skillet until golden. Set aside.
- In the same skillet, sauté sun dried tomatoes and garlic, then add chicken broth and simmer.
- Stir in heavy cream and Parmesan while stirring, and adjust seasoning. Use reserved pasta water to loosen the sauce if needed.
- Add chicken and pasta to the skillet, tossing to coat. Add spinach at the end until it wilts, then serve with extra Parmesan.
Notes
- Using sun dried tomatoes in oil adds additional flavor to the dish.
- Feel free to add more vegetables based on your preference.
