Instructions

  1. Begin by washing, peeling, and cubing the Yukon Gold potatoes into bite-sized pieces. Also, finely dice the onion and bell pepper to get the flavors ready for your skillet.
  2. In a large skillet over medium heat, add the ground beef. Break it up as it cooks, browning it completely until no longer pink, which should take about 6-8 minutes.
  3. Once the meat is cooked, toss in the finely diced onion and bell pepper. Sauté for about 5 minutes, until they become softened and fragrant.
  4. Gently fold the cubed potatoes and minced garlic into the skillet. Cook together for another 5 minutes, allowing the potatoes to begin browning slightly.
  5. Now it’s time to stir in the canned tomato sauce, ground cumin, dried oregano, salt, and pepper. Reduce the heat to low and let everything simmer together for 20 minutes until the flavors meld beautifully.
  6. After simmering, check that the potatoes are tender. If they need a bit more time, cover and cook a little longer. Just before serving, garnish generously with fresh cilantro for an extra pop of flavor.
