- 1 lb ground beef
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tbsp taco seasoning
- 6 flour tortillas
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and cooked through.
- Add the garlic, taco seasoning, and tomato paste. Stir well and let it cook for another 2 minutes.
- In a saucepan, melt the butter and whisk in the flour to make a roux.
- Slowly pour in the milk, whisking constantly until the mixture begins to thicken.
- Add the shredded cheddar cheese and stir until the cheese sauce is smooth and creamy. Season with salt and pepper.
- Preheat your oven to 375°F (190°C).
- Spoon the beef mixture evenly into each tortilla, roll them up tightly, and place them seam-side down in a greased baking dish.
- Pour the cheese sauce generously over the top of the enchiladas.
- Bake uncovered for 20–25 minutes, until the sauce is bubbling and the edges are golden.
- Let rest for a few minutes before serving.
Notes
- These enchiladas are best served with a side of sour cream or guacamole.
- You can add more vegetables to the beef mixture, such as bell peppers or corn, for additional flavor.
