Description
A deliciously seasoned roasted whole chicken that is crispy on the outside and juicy on the inside.
Ingredients

- 1 whole chicken, about 4 pounds
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- 2 tablespoons lime juice
Instructions
- Preheat oven to 425°F (220°C).
- In a small bowl, mix olive oil, garlic, paprika, cumin, oregano, salt, black pepper, chili powder, and lime juice until combined.
- Pat the chicken dry and rub the seasoning mixture all over the outside and inside the cavity.
- Place chicken breast-side up on a roasting rack or in a baking dish.
- Roast for 50–60 minutes, until skin is golden and internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for 10 minutes before carving and serving.
Notes
- For best results, allow the chicken to come to room temperature for 30 minutes before roasting.
- Resting the chicken after roasting helps the juices redistribute for more tender meat.
