A delicious blend of creamy potatoes and smoked Gouda cheese.
Ingredients

- 2 pounds Yukon Gold potatoes
- 4 tablespoons unsalted butter
- 1 cup heavy cream
- 1 ½ cups shredded smoked Gouda cheese
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon freshly ground black pepper
- 2 cloves roasted garlic (optional)
Instructions
- Peel and cut the potatoes into evenly sized chunks.
- Place them in a large pot, cover with cold water, and add salt. Bring to a boil and cook for 15–20 minutes or until fork-tender.
- While the potatoes are boiling, warm the heavy cream and butter together in a small saucepan over low heat.
- Drain the cooked potatoes and return them to the pot or a mixing bowl. Mash until smooth (a few small lumps are okay).
- Pour in the warm cream and butter mixture and stir to combine.
- Fold in the shredded smoked Gouda cheese until melted and fully incorporated.
- Add salt and pepper to taste.
- If using, mash in the roasted garlic for extra flavor.
- Serve immediately with a pat of butter and a sprinkle of cracked pepper.

- For an extra creamy texture, use more heavy cream.
