Ingredients

- 2 cups ripe tomatoes, diced
- 1 cup fresh mozzarella, cubed
- 1 medium avocado, diced
- 1/4 cup fresh basil leaves, torn
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the tomatoes; dice them into bite-sized pieces.
- Cut the fresh mozzarella into cubes similar in size to the tomatoes.
- Halve the avocado, remove the pit, scoop out the flesh, and dice it.
- In a large bowl, combine the tomatoes, mozzarella, and avocado gently.
- Add torn basil leaves to the mixture.
- Drizzle with olive oil and balsamic vinegar; season with salt and pepper before tossing lightly.
- Serve immediately for optimal freshness.
Notes
- For extra flavor, try adding a sprinkle of red pepper flakes for a bit of heat.
