Ingredients

  • 1 pound Boneless Chicken Thighs
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
  • 8 pieces Corn Tortillas
  • 2 pieces Ripe Avocados
  • 1 tablespoon Limes
  • 1 small White Onion
  • 1/4 cup Fresh Cilantro
  • 1/2 cup Queso Fresco Cheese

Instructions

  1. Begin by seasoning the boneless chicken thighs with chili powder, cumin, paprika, salt, and pepper. Allow to marinate for at least 15 minutes.
  2. While the chicken marinates, mash the ripe avocados in a bowl with fresh lime juice and a pinch of salt to create a creamy guacamole.
  3. Heat a skillet over medium heat and cook the marinated chicken for 6-8 minutes on each side until charred and cooked through.
  4. In the same skillet, heat the corn tortillas for about 30 seconds per side until pliable and slightly charred.
  5. Slice the cooked chicken into strips and place into warmed tortillas. Top with guacamole, onions, cilantro, and cheese.
