Description
This slow cooker chipotle beef is tender, flavorful, and perfect for tacos or served over rice.
Ingredients

- 3 lbs chuck roast
- 2 medium yellow onions, chopped
- 6 garlic cloves, minced
- 1 cup beef broth
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 chipotle peppers in adobo sauce, chopped
- 1/4 cup fresh lime juice
- 2 tbsp fresh cilantro, chopped (for garnish)
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping onions and mincing garlic.
- Sear the chuck roast in a skillet over medium-high heat until browned on all sides.
- Remove the meat and sauté onions and garlic until soft.
- Blend chipotle peppers, beef broth, lime juice, cumin, oregano, and bay leaves until smooth.
- Return the meat to the slow cooker or Dutch oven and pour the sauce over it.
- Slow cook on low for 8 hours or high for 4 hours until tender enough to shred.

- This dish is great for meal prep and can be made in large batches.
