- 1/2 cup (115g) granulated sugar
- 1 tsp vanilla extract
- 1 egg white
- 1 1/2 cups (228g) all-purpose flour
- 1 tsp baking powder
- 20 caramels, unwrapped
- 1 tbsp milk
- 2 cups (400g) milk chocolate chips
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper to prevent sticking and promote even baking.
- Beat the butter and granulated sugar until pale and fluffy, about two minutes. Add the vanilla extract and egg white, mixing until smooth and fully blended; this step builds a tender cookie base that still holds its shape.
- Add the flour and baking powder, mixing just until a soft dough forms as soon as no dry flour remains to keep the cookies from turning dense.
- Roll the dough to ¼–½ inch thickness. Cut into rounds and place on the prepared baking sheet for 6–8 minutes until the cookies are set and slightly puffy, but still pale on top.
- Transfer cookies to a wire rack and cool fully; this prevents the caramel from melting too quickly and spreading too thin.
- Microwave caramels with milk for one minute, stirring halfway, until smooth. Spoon caramel onto each cooled cookie and spread gently for 10–15 minutes until the caramel firms up.
- Melt the chocolate in short intervals, stirring until glossy. Spread a thin layer over the caramel and let set before serving; finally, the Twix Cookie Cups are ready to enjoy.
